Episode 09: Having Reservations

In today’s episode of the Real State, we discuss the current state of the restaurant industry and how the pandemic will transform the dining experience in the future. We explore how the experience at the restaurant is as important as the food and how more attention needs to be made to enhance the experience for diners. Our guest is Paul Gerard, the partner, designer, and head chef at the Antique Bar and Bakery in Hoboken NJ. Paul was also a partner and chef at Belle Reve in Manhattan, as well as a concept creator, designer, and menu creator for various other endeavors such as E’s Bar on the Upper West Side and Ethy’s on the Upper East Side of Manhattan. He is also the former co-host of Eating Disorder, a radio program that aired on the Heritage Network.
